Nifty-looking books I must remember to hunt down, since I don't already have a stack of books nearly as tall as I am waiting to be read *ahem*:

Only that tall? I'm disappointed (and no, I'm not going to start a DSW over whose unread book stack is taller). ;-)

McGee is wonderful. "On Food and Cooking" is very science-food geeky (like why the proportions of ingredients in Hollandaise sauce vary so wildly depending upon which source you look at). He also wrote "The Curious Cook", which is more of the same, except tends to be more accessible in its presentations (fewer graphs, IIRC).

If you like Alton Brown, you'll love McGee.
